Grow More Strawberries!




I have grown strawberries for years and never really had a big enough harvest to make more than one batch of jam, and graze for about a week.  Then I learned one simple trick to keep your strawberries producing...

Pinch the runners!
Runners are the new shoots that the plants send out.  When the new shoot touches dirt, it sends out roots and grows a new plant.  By pinching them, the plants are able to put energy into growing more yummy strawberries instead of a new plant!  i just pinch them as I go through and pick berries.

Garlic Stuffed Chicken





This is one of my families favorite meals.  I use a whole chicken for several reasons.  There are 6 of us in our family and some of us like breast meat while other fight over the 2 drumsticks.  I also like to have left overs to make soup with.  Lately my boys have started eating more and I usually do 2 chickens at a time.  Like I said, there are 6 of us and 4 are growing boys.  One chicken will be sufficient for smaller households.


First I chop one onion (yellow or red), celery (I use the inside of the stalk that no one likes to use for celery sticks), and 3 or 4 carrots.  Place the chopped vegetables on the bottom of a 9x13 baking dish.  Do not add any liquid, oil, or butter!




Place the chicken on top of the vegetables.  Chop several cloves to a whole head of garlic up.  Sometimes I add chopped parsley to the garlic as well.  Place garlic between the skin and the meat.


Push the garlic all around the chicken under the skin.  Don't forget to get around the drumsticks, too.

Place any left over garlic or vegetables in the open cavity of the chicken.  Sprinkle the top with your favorite seasoning.  I usually use Montreal Seasoning or salt and pepper, but you can use whatever your family prefers.  Place into a preheated 350 degree oven for about an hour.  The rule of thumb for chicken is that it is done when the juices run clear.  I use the pulling off a leg method.  If a drumstick pulls away from the rest of the chicken cleanly without a knife, it is done.



Serve your chicken with rice and broccoli.  Or pasta and salad.  Don't forget to scoop some yummy carrots, celery, and onions from the pan on top of your rice!
